The purpose of the paper: to pepare a technology of raspberry sparkling wine and to design a company which produce sparkling wine by secondary fermentation in bottles. Object of the paper: technology of raspberry sparkling wine by the traditional method. The structure of the paper. Produces raspberry sparkling wine, which is semi-dry. Traditional method is used to produce sparkling wine. Manufactory is plotted graphically with all the necessary equipment, premises and traffic flows. Important control points are in bottling. The shop is economically profitable if one bottle is sold for 8 euros. The volume of the paper. The paper includes 62 pages, 20 tables, 1 illustration, 30 literature sources and 2 appendixes.
