The demand for natural and organic products has grown recently, people are starting to buy foods, that are natural or organic, tasty and healthy, more and more. The cake with natural colourants is attractive not only for adults, but also for children, because cake is delicious, colourfull and is not harmful to health. The purpose of the paper: to apply the requirements of international standarts ISO 9001 and ISO 22000 in the production of cakes. The object of the paper: cakes production process of the company ,,Tortas” Ltd. The structure of the paper. The work consists of three parts (theoretical, analytical and financial-economic): 1. Theoreticl part 2. Planning and implementing production of safe food products 2.1. Raw materials, components and packaging material 2.2.Product description 2.3. Flow charts of food technological processes 2.4. Food safety risk analysis and application of management tools 2.5. Spatial planning, taking into account cross-contamination and food safety risk factors 2.6. Control of processes and products in the company 3. Financial and economic evaluation of the project The results of the paper. After analyzing all the work, it can be stated that producing a safe and high-quality product is a complicated process. First of all, you need to be interested in getting raw materials, materials and packaging. Then, to create a product that will be produced, it is mandatory that it be safe, healthy, harmless to humans. The key is to analyze all the risks that may come up in the production of the product. dc.description.abstract Išanalizavus visą darbą, galima teigti, jog saugaus ir kokybiško produkto pagaminimas yra sudėtingas procesas. Pirmiausiai reikia domėtis apie gaunamas žaliavas, medžiagas ir pakuotes. Tuomet, susikurti produktą, kuris bus gaminamas, privaloma, jog jis būtų saugus, sveikas, nekenksmingas žmogui.
