One of the most popular ways to go on sightseeing tours is the one by the recreative ship "Nemunas“ One of the main services on the cruise ship is catering. The aim of the bachelor thesis is to compose the menu corresponding to the needs of the quests on board. The following methods have been used to solve the issue and achieve the aim of the thesis: the analysis of references, technological research,technological calculations. In the theoretical part, the rout of the tour and the questions of organising dish production have been analysed, the main quest service and the dish service requirements have been discussed. In the technological part, the new menue consisting of 23 dishes has been compiled, the technological cards for all the dishes have been created, four of them with the prime cost and energetic value cards. One dish (cream pumpkin soup with seeds) has been chosen for the further research. The technological scheme has been created for it, alongside HACCP. The plan has been modified in order to be more correct and in accordance with the Food Hygiene Standards. The list of the products daily used has been created to find out the possible expenses on this work. The calculations showed that the expenses for the event are 854,33 Euros and the profit makes 341,86 Euros. The price with the markup price is 60 Euros. The premises in the cafe „Keturi metų laikai“ correspond to the requirements of sanitation and hygiene. High quality industrial equipment will be used. All the staff will know their official duty requirements and comply to them. The volume of the thesis is 52 pages. It includes 10 tables, 4 figures, 21 references, 3 appendixes.	en
dc.description.abstract	Pažintinė kelionė pramoginiu laivu „Nemunas“ – viena iš populiariausių apžvalginių ekskusijų. Viena iš pagrindinių paslaugų kruize – maitinimas. Baigiamojo darbo tikslas - parengti kruizo keleivių poreikius atitinkantį valgiaraštį ir suorganizuoti jų maitinimą kelionės Kaunas – Birštonas metu. Darbo tikslui įgyvendinti numatyti šie metodai: informacijos šaltinių analizė, technologiniai tyrimai, technologiniai skaičiavimai. Teorinėje dalyje apžvelgiamas kelionės maršrutas, aptariami pagrindiniai svečių aptarnavimo ir patiekalų patiekimo reikalavimai, apžvelgiami gamybos planavimo klausimai. Technologinėje dalyje buvo sudarytas 23-iejų patiekalų valgiaraštis. Visiems patiekalams valgiaraštyje buvo sudarytos technologijos kortelės, o keturiems kontroliniams patiekalams iš skirtingų patiekalų grupių buvo sudarytos savikainos bei energinės-maistinės vertės kortelės. Buvo atrinktas vienas pagrindinis patiekalas, kreminė moliūgų sriuba su sėklomis, kuriam buvo sudaryta technologinė schema, nustatyti visi svarbiausi valdymo taškai bei aprašyti jo pagrindiniai technologiniai gamybos procesai. Taip pat buvo sudaryta dienos žaliavų suvestinė. Remiantis mano atliktais apskaičiavimais, renginio išlaidos sudaro 854,33 eur. Renginio pelnas yra 341,86 eur. Renginio kaina vienam žmogui, su antkainiu, yra 60 eur. Kavinėje „Keturi metų laikai“ patalpos įrengtos ir prižiūrimos pagal sanitarijos ir higienos reikalavimus, naudojama kokybiška pramoninė maisto gaminimo įranga. Visi darbuotojai žino savo pareigybinius reikalavimus ir jų laikosi.	en_US
