The purpose of the paper. To design the technology of sweetened condensed milk production.
The object of the paper. Production technology of sweetened condensed milk.
The structure of the paper. Introduction, theoretical part, technological part, financial-economic evaluation of the project, conclusions, list of literature and other sources of information, annexes.
The results of the paper. In the final work, the technology of sweetened condensed milk production is modeled, during which 2000 kg of sweetened condensed milk and 2000 kg of sweetened condensed milk with raspberry aroma are produced per shift. It is estimated that 13346.13 kg of raw milk, 10746.24 kg of sugar, 0.81 kg of lactose and 12.12 kg of raspberry aroma essence will be required during the production of sweetened condensed milk. The finished product is packed in cans, which are sterilized at 400-460 °C and covered with lids with an "ear", which are fired at 105-115 °C. After analyzing the food safety quality requirements in the technological processes, CriticalControl Points (CCP) were identified for the acceptance of raw materials (CCP-1C) and pasteurization (CCP-2B). The total area ofthe sweetened condensed milk production workshop is 640.98 m2, of which the area ofproduction premises is 175.42 m2. After calculating the financial and economic indicators, it was established that the cost price of 1 kg of sweetened condensed milk is € 5.12, and that of sweetened condensed milk with raspberry aroma essence is € 8.12.

Baigiamajame darbe sumodeliuota saldinto sutirštinto pieno gamybos technologija, kurios metu pagaminama 2000 kg saldinto sutirštinto pieno ir 2000 kg saldinto sutirštinto pieno su aviečių aromatu per pamainą.Apskaičiuota, jog saldinto sutirštinto pieno gamybos metu bus reikalinga 13346,13 kg žalio pieno, 10746,24 kg cukraus, 0,81 kg laktozės bei 12,12 kg aviečių aromato esencijos. Gatavas produktas pakuojamas į skardines dėžutes, kurios sterilizuojamos 400-460 °C temperatūroje ir uždengiamos dangteliais su „ausele“, kurie iškaitinami 105-115 °C temperatūroje.Išanalizavus technologiniuose procesuose maisto saugos kokybės reikalavimus, nustatyti svarbūs valdymo taškai (SVT) priimant žaliavas (SVT-1C) bei pasterizuojant (SVT-2B). Saldinto sutirštinto pieno gamybos cecho bendras plotas yra 640,98 m2, iš jų gamybinių patalpų plotas 175,42 m2.Apskaičiavus finansinius–ekonominius rodiklius nustatyta, jog saldinto sutirštinto pieno 1 kg savikaina yra 5,12 Eur, o saldinto sutirštinto pieno su aviečių aromato esencija 8,12 Eur.
Baigiamojo darbo apimtis. Darbą sudaro 42 puslapiai, 13 lentelių, 5 paveikslai, 32 literatūros šaltiniai. |
