The purpose of the paper: To implement the food safety and quality management systems in the bread-making enterprise, applying the legal requirements. The object of the paper: Bread kvass workshop, whose productivity is 10 000 litres per year. The structure of the paper. Introduction, theory, technological part, planning and realization of safe food production, financial - economic evaluation, conclusions, recommendations / suggestions, literature and other sources of information. The results of the paper. The food safety and quality system was implemented in kvass production company. The description of the produkct is presented.
