dc.description	Lambic-style brewery was designed with a capacity of 100 000 liters per year, 50 000 liters of Lambic beer and 50 liters of Kriek beer. The workshop is planned to have 5 batches a week, 20 a month, 243 a year. A total of 6 people will work in the workshop, in a single shift lasting 8 hours. According to the technological flow chart, and the HACCP system, physical, chemical and biological risk factors were examined in the workshop, and 3 CCP’s were identified. CCP – 1C and CCP – 2B in storage of raw materials, and CCP – 3C during beer bottling. To control CCP, preventive measures were selected, the necessary programs were identified in the next stages. The brewery was designed in an AutoCAD program, and is arranged in such a way to avoid cross-contamination throughout the process - from receiving of raw materials to the storage of finished products. The total area of the brewery is 388.45 m2. A financial and economic evaluation of a Lambic style brewery was performed, which revealed that the costs amounted to EUR 732.427,88 the cost per liter of Lambic beer being EUR 7.60, and the cost of Kriek beer being EUR 7.98	en_US
dc.description.abstract	Suprojektuota Lambic stiliaus alaus gamybos įmonė, kurios našumas 100 000 litrų per metus, iš kurių 50 000 litrų Lambic alaus ir 50 000 litrų Kriek alaus. Įmonėje planuojama, kad per savaitę bus atliekami 5 alaus virimai, per mėnesį – 20, per metus tai sudarys 243. Iš viso įmonėje dirbs 6 žmonės, viena pamaina, kurios trukmė 8 valandos. Pagal technologinę srauto diagramą ir RVASVT sistema įmonėje buvo išnagrinėti fiziniai, cheminiai ir biologiniai rizikos veiksniai bei identifikuoti 3 SVT: SVT-1B ir SVT-2C – žaliavų sandėliavime, SVT-3C – alaus išpilstymo metu. Kontroliuoti SVT parengta RVASVT sistema, kituose etapuose - būtinosios programos. AutoCad programa nubraižyta įmonė, kuri išdėstyta taip, kad būtų išvengta kryžminės taršos viso proceso metu – nuo žaliavų priėmimo iki gatavos produkcijos sandėliavimo. Bendras įmonės plotas užima 388,45 m2.. Atliktas Lambic stiliaus alaus finansinis – ekonominis vertinimas, kurio metu paaiškėjo, jog išlaidos sudaro 732 427,88 Eur, Lambic alaus 1 litro savikaina – 7,60 Eur, Kriek alaus – 7,98 Eur.	en_US
