dc.description Aim of the paper: To evaluate the physico-chemical and microbiological quality indicators of the non-pasteurized milk. Work task: 1. Discuss the information provided in the scientific literature on the composition of milk and its significance for the human body. 2. To determine the physico-chemical characteristics of unpasteurised milk: acidity, density, traces of soda, ammonia and hydrogen peroxide. 3. To evaluate bacterial contamination of unpasteurised milk. Milk and its products are also widely used these days. Valerij Dobrovolski and Rimantas Stukas (2014) in the study book stated that, according to various studies, only 16.6 percent of the respondents said that they do not use milk and its products. However, more than a third (36.9%) of the population consumes these products daily, and 3 - 5 times a week - 26.5%. Unpasteurized cow's milk collected from different parts of Lithuania was used for the study. The studies were carried out in accordance with Order no. 85-3337. Milk titration, titratable lactic acidity, and inhibitory substances were determined and measured in the study: traces of soda, ammonia and hydrogen peroxide. Bacterial contamination of raw milk during milk intake with Enterobacteriaceae family E. coli and coliforms is also tested. At the same time, was tested Salmonella spp., which is one of the most common zoonotic bacteria. All samples were of density, but most of the samples had increased acidity. The increase was time-dependent, indicating an increase in the number of lactating bacteria. No other trends related to time or sample source - not found. Inhibitors - soda, hydrogen and ammonia - were not found in unpasteurized cow's milk. Considering the bacterial contamination of the milk, a large number of coliforms and single E.coli colonies were observed. These indicators indicate poor sanitary status during milk collection and storage processes in unpasteurised milk. There is also a higher level of bacterial contamination in samples collected from individual farmers. Salmonella spp. species were not found in this study en_US
