dc.description	Based on the analysis of literature sources, a correct and balanced diet is vital for a person since childhood. Thus, the menu development project is beneficial to the public. In the technological part, a menu of 10 dishes was created, 4 of which were provided with the necessary documentation - cost cards, nutritional and energy value cards, SVT analysis of the production process. The dishes are focused on a healthy diet, as well as the customer's request to include bagels. A study of panna cotta dessert using different thickeners (agar, pectin and gelatin) has shown that gelatin is the most suitable thickener. According to the financial – economic indicators, the menu development project is profitable. After calculating the costs of the selected four dishes and the planned sales revenue for one year, the net profit is EUR 703328,6.	en_US
dc.description.abstract	Literatūros šaltinių analizėje, remiantis autorių nuomonėmis, įrodyta, jog žmogui gyvybiškai svarbi teisinga, subalansuota mityba nuo vaikystės. Technologinėje dalyje sukurtas 10 patieklų valgiaraštis iš kurių 4 pateikti su reikiama dokumentacija – savikainos kortelėmis, maistinės ir energinės vertės kortelėmis, gamybinio proceso SVT analizė. Patiekalai orientuoti į sveikatai palankią mitybą, taip pat patenkintas užsakovo prašymas įtraukti riestainius „Bagels“. Atlikus deserto „Panna Cotta“ tyrimą su skirtingais standikliais (agaru, pektinu ir želatina), įrodyta, jog labiausiai tinkamas standiklis – želatina. Finansiškai – ekonomiškai įvertinus meniu papildymo projektas yra pelningas. Apskaičiavus pasirinktų 4 patiekalų sąnaudas ir planuojamas pardavimo pajamas per vienerius metus, grynasis pelnas 703328,6 Eur.	en_US
