dc.description	Canteen usually offers dishes of daily demand that make up the entire daily ration. Improving the catering establishment requires a refreshment of the dishes assortment, in order to make the choice more diverse, so that any visitor could find his favorite food among the plenty of dishes. In this final thesis, a new technological program of Egliana canteen is developed. Dishes were renewed, the menu was supplemented with 5 new hot dishes (natural pork neck steak with BBQ sauce, beef steak in horseradish sauce, beef bourguignon, Mexican pork steak, small pork steak with cheese and sun-dried tomatoes) and 5 new vegetarian dishes (vegetarian fajitas with guacamole, vegetarian lasagna, broccoli steaks, eggplant schnitzel, zucchini rolls (cannelloni) with ricotta in tomato sauce). The variety of raw materials and the way they were presented were taken into account. Ten process charts were created, which show not only the quantities of raw materials, but also the sequence of technological processes; 2 cost value charts, 2 nutritional energy value charts were also presented. The final thesis presents a flow chart of the technological process of the dish, a description of the technological process and also chemical and biochemical analysis of the production process. Modeling of production premises was performed and human safety at work was assessed. A technological study was also conducted, preparing guacamole with gelatin, agar and without any stiffener. Softness, taste, smell were the best when guacamole was prepared without any stiffener. With agar, the guacamole was the stiffest, and this was the least liked taste. In the economic part, the costs of creating the menu, preparing control dishes and research work were calculated, and a total of EUR 700.21 was spent for these activities.	en_US
dc.description.abstract	Valgykloje dažniausiai siūloma kasdienės paklausos patiekalai, kurie sudaro visą dienos racioną. Tobulėjant maitinimo įstaigoje reikalingas patiekalų atnaujinimas, kurioje pasirinkimas būtų gausus, kad iš patiekalų gausybės, lankytojas atrastų savo mėgstamų valgių. Šiame baigiamajame darbe sudaryta nauja valgyklos „Egliana“ technologinė programa. Atnaujinti patiekalai, valgiaraštis papildytas 5 naujais karštais (natūraliu kiaulienos sprandinės kepsniu su BBQ padažu, jautienos kepsniu krienų padaže, burgundišku jautienos troškiniu, kiaulienos kepsniu meksikietiškai, kiaulienos kepsniukais su sūriu ir saulėje džiovintais pomidorais) ir 5 naujais vegetariniais (vegetariška fajita su gvakamole, vegetariška lazanija, brokolių kepsneliais, baklažanų šniceliu, cukinijų suktinukais (cannelloni) su rikota pomidorų padaže) patiekalais. Buvo atsižvelgiama į žaliavų įvairovę bei pateikimo būdą. Sudaryta dešimt technologijos kortelių, kurios parodo ne tik žaliavų kiekius, bet ir technologinių procesų eiliškumą, pateiktos 2 savikainos, 2 maistinės energinės vertės kortelės. Baigiamajame darbe pateikta patiekalo technologinio proceso srautų diagrama, technologinio proceso aprašas ir cheminė, biocheminė gamybos proceso analizė. Atliktas gamybinių patalpų modeliavimas bei įvertinta žmogaus sauga darbe. Taip pat atliktas technologinis tyrimas, gaminant gvakomolę su želatina, agaru ir be jokio standiklio. Minkštumas, skonis, kvapas geriausias buvo gvakamolėje be standiklio. Su agaru gvakamolė buvo standžiausia ir skonis mažiausiai patiko. Ekonominėje dalyje buvo apskaičiuota valgiaraščio sudarymo, kontrolinių patiekalų gaminimo bei tiriamojo darbo išlaidos, kurių metu viso išleista 700,21 Eur.	en_US
