dc.description	In the theoretical part, first and second chapters, the history of the beginning and development of the Lithuanian cuisine, the creation of the menu, the organisation of the restaurant premises and interior features are presented. In the third chapter a ten - course menu for a day is presented, technological calculations and the organisation of health and safety at work are discussed. In the fourth chapter chemical and biochemical processes analysis is described, test methods are singled out and presented as well as their legitimacy, organisation, process and results. In the financial - economic project the planned restaurant expenditure and economic index are calculated.	en_US
dc.description.abstract	Teorinėje dalyje, pirmame ir antrame skyriuose, aptariama lietuviškos virtuvės atsiradimo ir vystymosi istorija, valgiaraščio sukūrimas, pristatomas restorano darbo vietos organizavimas, interjero ypatumai. Trečiame skyriuje, pateiktas sukurtas 10 patiekalų dienos valgiaraštis, aptariami technologiniai skaičiavimai, žmogaus saugos organizavimas darbe. Ketvirtame – aprašoma cheminė, biocheminė procesų analizė, išskiriami ir pristatomi atliktų tyrimų metodai – jų pagrįstumas, organizavimas ir eiga, rezultatai. Finansiniame – ekonominiame projekte apskaičiuotos organizuojamos restorano sąnaudos, ekonominiai rodikliai.	en_US
