dc.description	An analysis of the scientific literature and the requirements of the Global Food Safety standards for the company to ensure safety and quality management, including allergen management was conducted. The operational prerequisite programme of allergens was prepared. A description of raw materials, products are provided, allergens are identified, description of the production process was prepared and a flow chart was created. All possible food safety hazards during each stage of the production process were analyzed and their control measures were selected, in addition, the CCP-1P was identified, its critical limit was determinated. A list of product safety hazards and a schedule of laboratory tests were compiled. Economic calculations were performed to estimate the prime cost of cookies. A cookie manufacturing company was designed and premises were arranged according to the risk of cross contamination, technological process.	en_US
dc.description.abstract	Atlikta mokslinės literatūros analizė, išnagrinėti visuotinių standartų reikalavimai įmonei užtikrinant saugos ir kokybės valdymą, įskaitant ir alergenų valdymą. Parengta alergenų būtinoji valdymo programa. Pateiktas žaliavų bei produkto aprašas, identifikuoti alergenai, parengtas gamybos proceso aprašas bei sudaryta srauto diagrama. Išanalizuoti visi galimi RV kiekvieno gamybos proceso etapo metu bei parinktos jų valdymo priemonės, nustatytas SVT-1F bei šio svarbaus valdymo taško kritinė riba. Sudarytas produkto rizikos veiksnių sąrašas, laboratorinių tyrimų grafikas. Atlikti ekonominiai skaičiavimai įvertinant sausainių savikainą. Suprojektuotas sausainių gamybos cechas, kuriame patalpos išdėstytos pagal kryžminės taršos riziką, technologinį procesą.	en_US
