dc.description	In the final work, a curd cheese and saffron production workshop with a capacity of 500 kg curd saffron cheese and 340 kg cream was designed. The curd cheeses made with saffron are packed using vacuum bags and the cream is poured into buckets of 20 l. It was estimated that 3620,2 kg of milk, 0.62 g of saffron and 7.83 kg of salt will be required for the production of curd cheese with saffron. After analyzing the food safety risk, Critical Control Points (CCP) were indentified in the company: raw materials CCP-1C, pasteurization CCP-2B and packaging CCP-3P. The area of the curd cheese with saffron manufactory is 381.62 m2, the production premises are 127.07 m2. After calculating the financial and economic indicators, the price of a kilogram of curd cheese with saffron was set at € 31.93 and cream at € 0.99.	en_US
dc.description.abstract	Baigiamajame darbe suprojektuotas varškės sūrio su šafranu gamybos cechas, kurio našumas 500 kg varškės sūrio su šafranu ir 340 kg grietinėlės. Pagaminti varškės sūriai su šafranu įpakuojami naudojant vakuuminius maišelius, o grietinėlė išpilstoma į kibirus po 20 l. Reikalingos žaliavos norint pagaminti varškės sūriui su šafranu reikės 3620,2 kg pieno, 0,62 g šafrano ir 7,83 kg druskos. Išanalizavus maisto saugos riziką, nustatyti svarbūs valdymo taškai priimant žaliavas SVT-1C, pasterizuojant SVT-2B ir fasavimo metu SVT-3F. Varškės sūrio su šafranu cecho plotas yra 381,62 m2, gamybos plotą sudaro 127,07 m2. Apskaičiavus finansinius-ekonominius rodiklius nustatyta varškės sūrio su šafranu kilogramo kaina 31,93 Eur ir grietinėlės 0,99 Eur.	en_US
